ENDOZYM® Protease GF
Endozym Protease GF is an enzymatic solution with specific proteolytic activity for the degradation of proteins responsible for cold clouding (chill haze). The analysis of the beer after aging shows better turbidity (EBC 90 °, EBC 25 °) and protein stability (EBC Analytica 9.40 and 9.41). Thanks to its broad spectrum of activity, protein degradation includes gluten (Competitive Elisa, mg / L), without affecting the stability of the foam (Nibem). The use of this preparation allows the partial or total hydrolysis of the peptide bonds of proteins, depending on the quality of the raw material and the dosage of the enzyme (g / hL of cold must).
