FEATURES
TARTARIC ACID is naturally present in grapes and wine both free and salified. As an acidity regulator, it is expected to be used in many food products. It comes in the form of white-transparent crystals.
USES TARTARIC ACID together with malic and lactic acid, it is an acidifier admitted by the laws in force for the wine industry. From the technological point of view, it is the acidifying treatment that less changes the composition and characteristics of a wine, as the tartaric ion is already abundantly present in the starting product.
The added TARTARIC ACID gives the product a theoretical increase in acidity proportional to the quantity used. In reality, in the presence of potassium, it forms slightly soluble salts of potassium acid tartrate which precipitate, in varying quantities, according to the chemical and physical characteristics of the wine. The lowering of the pH following the intervention with TARTARIC ACID provides technical advantages of undoubted utility. In winemaking it improves the quality of the wines, reduces the production of volatile acidity and improves the vivacity of the color.
